Creamy Potato & Bacon Soup That Everyone Falls in Love With 🥣

If you’re looking for the ultimate comfort food — the kind that makes everyone go back for seconds — this Creamy Potato & Bacon Soup is the one! Rich, hearty, and bursting with flavor, it’s the perfect balance of creamy potatoes, crispy bacon, and melted cheese.

Every spoonful feels like a warm hug on a cold day. My husband says this is the one dish he could eat every single night — and I don’t blame him.

Ingredients:

  • 5–6 medium potatoes, peeled and cubed
  • 1 small onion, finely chopped
  • 4 slices of bacon, cooked and crumbled
  • 3 cups chicken broth
  • 1 cup milk (or cream for extra richness)
  • 2 tbsp butter
  • 1 tbsp flour (for thickening)
  • 1 cup shredded cheddar cheese
  • Salt, pepper, and parsley to taste

Instructions:

  1. In a pot, melt butter and sauté onions until soft.
  2. Add flour and stir for a minute to create a light roux.
  3. Pour in chicken broth and add potatoes — cook until tender.
  4. Mix in milk, bacon, and cheese, stirring until thick and creamy.
  5. Season with salt, pepper, and sprinkle parsley on top.

Serve hot, with an extra pinch of cheese and bacon on top.
Warning: once you make it, you’ll be asked to cook it again and again!
