  • 3 medium green tomatoes (firm and unripe)
  • ½ cup all-purpose flour
  • 2 eggs (beaten)
  • 1 cup cornmeal or breadcrumbs
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • Oil for frying

Instructions:

  1. Slice the green tomatoes about ½ inch thick.
  2. Pat them dry with paper towels.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with the cornmeal (mixed with salt, pepper, and paprika).
  4. Dip each tomato slice first in flour, then in egg, then coat well with cornmeal.
  5. Heat oil in a skillet over medium heat.
  6. Fry the tomato slices for 2–3 minutes on each side until golden brown.
  7. Place on paper towels to drain excess oil.

Serve warm with ranch dressing, spicy mayo, or a drizzle of honey for a sweet twist.
